Eggplant


I remember a day from high school. I took Home Economics, didn't we all? The teacher told us about eggplant. We saw a film on how to wash it, cook it and serve it. She brought a few and we passed them around, still whole but none the less, an amazing vegetable.

I loved the color. Purple, yippee, my favorite. I liked the texture. It was shiny and smooth. The food dishes she showed us to make were all on film or from a book. She never actually cooked it for or with us.

Everything I knew about eggplant was splendid.

This was it. My new vegetable of choice. I would make every dish she showed us. I couldn't wait to wow my mom with the dish I was going to make.

Mom bought an eggplant.
I had gone through all the recipes the Home Economics teacher gave me and selected one.

I used the special kitchen knife. I got out the special baking pan and all the ingredients I would need. Oh my was I proud of myself and so excited to try this wonderful dish. Mmmmmm eggplant, yummy.

The dish I made was a baked recipe. Right before putting it in the oven I gave it one last view. I would have taken a picture of my masterpiece but that was just over the top!

Funny thing happened as it was baking. An awful odor was coming from the kitchen. I ignored it. Then I investigated. It was coming from the oven. I opened the oven door and pulled out the rack. I knelt down and gave the beautiful, purple eggplant dish a deep whiff from my waiting nose.

It was a dreadful smell. What was so amazing on the outside was repulsive to me now.

Life experience - life may seem greener on the other side. Life IS NOT always greener or even purple and tasteful on the other side. Stick with the blessings before you and give thanks to the Lord for He is good.
